I need something settled:

Should I leave the A/C on while I'm at work on a lower setting so my stuff doesn't melt while I'm away?

Or do I turn it off completely and then turn it back on when I get home?

Any suggestions are highly appreciated.

I'd say it depends on the temperature outside, and how that increases the temperature inside. At what point would things get damaged? 80 degrees?

Does your unit turn itself off when it gets to a certain point? Leave it on. Otherwise it might be worth investing in the type that does.

Yeah, I agree with the above. I generally keep the AC on low and run it consistently rather than try to cool things down all at once on a high setting.
